The Waffle Lab Review

Although not located immediately close to Rocky, The Waffle Lab should still be on your go-to list for breakfasts and brunches.

Started as a food truck serving gourmet Belgian Liège waffles with delicious combinations on top, The Waffle Lab recently expanded into a permanent restaurant facility on the corner of Mason and Olive Streets in Old Town. The new locale has a definite hipster vibe and, aside from limited seating, is a fun place to be. While this location doesn’t make eating here reasonable for school day lunches, weekends or late-start Wednesdays are great times to dine.

The food itself is enjoyable. The Waffle Lab serves Liège waffles, which are dough-based waffles with caramelized sugar. Liège waffles are sweet and moist enough to be eaten plain but just as delicious with toppings. Nine waffles constitute the dessert menu and live up to their sweet namesake. Savory waffles, of which there are also nine, are more meal-type waffles. These range from grilled cheese to chicken and waffles to a caprese salad waffle. The Waffle Lab also offers gluten-free options.

In terms of cost, The Waffle Lab isn’t too outrageous. For a smaller, local restaurant, the prices are actually pretty low. The highest priced meal, the Eggs Benedict Waffle, is $12, but most things tend to run around $7 or $8. For those more stingy with cash, the Classic Liège Waffle (a waffle topped with powdered sugar and cinnamon) is only $4.

Part of the appeal of The Waffle Lab is that the food is made fresh in-shop. This guarantees a far better meal than something pulled out of a freezer and thawed, but it also slows down the dining process. Overall, the wait shouldn’t be bad enough to deter most customers, and the food makes up for it. In fact, depending on what time you go, you’ll probably wait longer for a table than your meal (a good sign that the community also enjoys eating here).

On those late-start or weekend mornings when you have time to fill and are looking for a delicious waffle at a reasonable price, I’d suggest heading over to the corner of Olive and Mason for The Waffle Lab.
