Fall has just begun and there is no doubt that everything spices up… literally. Here are some of the best fall treats:

Pumpkin Pie (courtesy of Mrs. White):

Ingredients:

  • 1 15 oz. can pumpkin
  • ¾ c sugar
  • 1 t cinnamon
  • ½ t ginger
  • ½ t allspice
  • ¾ t salt
  • 2 eggs, beaten
  • 1 c milk
  • 1 9-inch pastry or graham cracker lined pan

Directions:

  1. Preheat oven to 450 F
  2. Mix pumpkin, sugar, spices, salt and beaten eggs
  3. Add milk and mix well
  4. Pour into pastry-lined pan
  5. Bake for 60-75 minutes
    1. Tip: Start baking at 450 F for 10 minutes and then reduce to 375 F for 40 more minutes
    2. Knife should come out clean and make a neat line

Ingredients:

  • 1 ½ c sugar
  • 1 ¾ c flour
  • ½ t cinnamon
  • ½ t nutmeg
  • ¼ t baking powder
  • 1 t soda
  • ½ t salt
  • ½ t cloves
  • 2 eggs
  • ½ c oil
  • ⅓ c water
  • 1 c pumpkin

Directions:

  1. Preheat oven to 350 F
  2. Combine dry ingredients (the first 8)
  3. Add the wet ingredients
  4. Mix well
  5. Bake for 90 minutes or until toothpick comes out clean
Granny Smith apples are perfect for cooking because of the texture and taste.

Apple Dumplings:

Ingredients:

  • 2 (8 each) cans of refrigerated crescent roll dough
  • 2 sticks of butter
  • 1 ½ c brown sugar
  • 1 t vanilla extract
  • 1 t cinnamon
  • 1 12 oz. can 7 UP
  • 2 large Granny Smith apples, peeled and cored

Directions:

  1. Butter a 13 x 9 inch baking dish
  2. Preheat oven to 350 F
  3. Peel and core apples, cut each apple into 8 slices
  4. Roll each apple slice in a crescent roll and place in a buttered dish
  5. Melt butter, stir in sugar, vanilla, and cinnamon
  6. When it is thickened, remove from heat and pour over dumplings
  7. Pour soda in the middle and along the edges of the pan (not over the rolls)
  8. Bake for 35-45 minutes, or until they become golden brown
  9. Serve warm

 

Chewy Ginger Cookies:

Ingredients:

  • 2 ¼ c all-purpose flour
  • 2 t ground ginger
  • 1 t baking soda
  • ¾ t ground cinnamon
  • ½ t ground cloves
  • ¼ t salt
  • ¾ c butter, softened
  • 1 c sugar
  • 1 egg
  • 1 T water
  • ¼ c molasses
  • Sugar, for rolling

Directions:

  1. Preheat oven to 350 F
  2. Sift flour, ginger, baking soda, cinnamon, cloves, and salt; set aside
  3. In a large bowl, cream together butter and 1 c sugar until light and fluffy
  4. Beat in egg
  5. Stir in water and molasses
  6. Fold in flour, ginger, baking soda, cinnamon, cloves, and salt and mix until well combined
  7. Shape dough into 1-inch balls
  8. Roll in sugar and place 2” apart on ungreased cookie sheet
  9. Bake for 8-10 minutes
  10. Allow cookies to cool for 5 minutes before removing from wire rack
Apple butter makes a great topping on anything for fall.

Homemade Apple Butter:

Ingredients:

  • 4 pounds apples, peeled and chopped
  • 2 c apple cider
  • 1 c packed brown sugar
  • Salt
  • 1 T fresh lemon juice
  • 1 t ground cinnamon
  • 1 t vanilla extract
  • Pinch of ground cloves

Directions:

  1. Preheat oven to 250 F
  2. Combine apples, apple cider, brown sugar, and ½ t salt in a large ovenproof pot over medium heat
  3. Bring to a simmer, partially cover and cook until the apples are soft, about 20 minutes
  4. Remove from heat and stir in lemon juice, cinnamon, vanilla and cloves
  5. Puree the mixture in a blender until smooth
  6. Return the mixture to the pot, uncovered, stirring every 30 minutes until thickened (about 2 ½ – 3 ½ hours)
  7. Remove from the oven and let cool completely
  8. Transfer to container and refrigerate up to 5 days
